I’ll be honest, yuca was never my favorite dish growing up in Peru. I used to loathe it. It felt too tough, too fibrous, and too ordinary. That changed the day I tried the perfect fried yuca, golden and crispy on the outside, creamy and tender on the inside.
That moment inspired me to chase that perfect texture, to bring a new kind of joy to something I once overlooked. Now, seeing people fall in love with this humble root the way I once did fills me with pride.
In life, it’s easy to let past experiences shape our opinions. But just like with food, one new experience can completely change how we see things.
