MEET THE DUO BEHIND THE MENU

Rooted in Peruvian-Chinese flavors, driven by the need for belonging




One Hot Minute is a reflection of a deep passion for sharing Peruvian and Chinese heritage through food.

Sarina and Cesar grew up in California, shaped by two food-centered and flavor-packed cultures—Chinese and Peruvian. While they loved the foods they were raised on, they often found themselves feeling out of place in spaces that leaned entirely one way. So, they decided to create something that felt more like them.

It started in 2020, when they began helping a friend with his pop-up. They weren’t planning to launch anything—they just liked being in the mix. When that project wrapped, they realized how much they missed sharing food with people. By 2022, they decided to start a pop-up of their own.

After countless rounds of recipe testing and long conversations about what comfort food really meant to them, they landed on their first creation: the tacu tacu sandwich. It brought together flavors from both their backgrounds, and marked the beginning of something bigger.

With one sandwich and a strong sense of purpose, they set up on the streets of Echo Park. From there, things began to grow—first local events, then farmers markets, and eventually climbing gyms.
